This wine ferments for 10-14 days, with pumping over in an open vat, followed immediately by malolactic fermantation. It then moves on to mature for 6 months in oak casks, then for a further 6 months in French oak barriques with various degrees of toasting. The result is a deep ruby red wine, with opening fragrances of cherry and forest fruits amongst floral notes and sweet spices. Initially it is deep, round and full on the palate, leading to a pulpy finish dominated by fruit and sweet spices. It is recommended for barbecued meats, with game, or with mature cheeses.
